[A] In buying calves' feet always get those that are singed, not skinned. Much of the glutinous or jelly property resides in the skin.
[B] To make this vinegar—half fill a bottle with tarragon leaves, and fill it quite up with the best cider vinegar. Cork it tightly, and do not remove the tarragon, but let it remain always at the bottom. The flavor is very fine.
[C] The herbs summer savory and thyme (like the spices cloves and allspice) are now seldom used in good cookery.
