New Mexico State University’s Cooperative Extension Service is a gold mine of recipes. If you can’t eat deep-fried foods, you might want to try their version of baked empanadas. 3 ounces cream cheese ½ cup butter or margarine 1 cup flour 1 cup thick applesauce Cream butter or margarine with cream cheese until fluffy. Add flour and mix until a smooth ball is formed. Wrap well and refrigerate for at least 4 hours or overnight. Remove from refrigerator ½ hour before using. Roll out dough on a floured board to ?-inch thickness. Cut in approximately 3-inch rounds. Place 1 tablespoon of applesauce on each round. Fold over and seal. Flute edges. Bake at 375 degrees F 15 to 20 minutes. Serve warm with a sprinkle of powdered sugar. May be served with ice cream if desired. (This dough is very tricky and hard to handle.) |
